Sweet and Tangy Chicken

Why This Chicken Bowl Works

The recipe brings together contrasting textures and flavours.
Roasting develops the natural sweetness of squash and red onion, while pomegranate molasses gives the chicken a distinctive fruity sharpness.
Kale and mixed grains create a hearty base, and fresh cucumber, radishes and spring onions provide crunch.
A little lemon juice brightens the dish, preventing the honey glaze and feta from making it taste too rich.

How To Make Glazed Chicken

Step 1: Prepare the vegetables.
Preheat the oven to 220°C, or 200°C fan.
Peel the squash and cut it into small, evenly sized cubes. Slice the red onion into wedges.
Arrange both vegetables on a roasting tray, drizzle with one teaspoon of olive oil and season lightly.
Roast for 10 minutes.
Step 2: Add the chicken.
Season the chicken and rub them with another teaspoon of olive oil.
Place them among the partially roasted vegetables and return the tray to the oven for 10 minutes.
Step 3: Prepare the glaze.
Mix two tablespoons of pomegranate molasses with the honey.
Brush half the mixture over the chicken and continue roasting for another 10–15 minutes.
Add the remaining glaze halfway through.
The chicken should develop a glossy coating and reach an internal temperature of at least 75°C.
Step 4: Prepare the grain mixture.
While the chicken cooks, chop the cucumber, radishes and spring onions.
Place the kale in a bowl with the remaining teaspoon of olive oil and a little salt.
Massage the leaves gently until softened, removing any tough stems.
Add the cooked grains, squeeze over the lemon juice and drizzle with two teaspoons of pomegranate molasses.
Mix thoroughly.
Step 5: Assemble the bowls.
Divide the grains and kale between two serving bowls.
Add the fresh vegetables and roasted squash.
Slice the chicken and arrange it on top, then crumble over the feta.
Finish with the delicious roasting juices.

Tips For Better Results

Cut the squash into similar-sized pieces to ensure even roasting. If using sweet potatoes, check their tenderness before removing the tray from the oven.
For a quicker meal, choose ready-cooked grains that only require reheating.
Pomegranate molasses has a concentrated sweet-sour flavour, so avoid replacing it with ordinary pomegranate juice. You can also prepare the vegetables and grains in advance, keeping them refrigerated until needed.
